GARLIC SCAPES

What are garlic scapes you ask? The most amazing little green stock. Garlic scapes are a center stock that blooms in late May and June only in hard neck garlic varieties. If the stock is not cut it will turn into a flowering stock called a Allium Sativum. Cutting the stock, which is called a scape, will allow the garlic bulb to mature and add more flavor to the garlic itself. The scape is similar to a green onion. It has a amazing flavor of garlic and can be eaten raw or cooked to your liking.
Due to the harsh late winter our 2020/2021 Garlic crop was limited and we have decided to retain our garlic this year for hopes of a better season next year. Thank you for your understanding.
